Plant-based meals don’t have to be boring! Our Health Coaches shared their favorite plant-based meals that are satisfying and don’t skimp on flavor.
My go-to plant-based meal is a tempeh stir fry. Tempeh is a fermented soy product that has a little more of a “meaty” texture compared to tofu. This stir fry is perfect for using whatever veggies you have on hand or need to get rid of. I also really like to throw cashews in at the end right before dishing up!

I love making baked tofu with peanut sauce and greens, served over brown rice or riced cauliflower. I’m not a purist, I buy packages of frozen riced cauliflower to save time cooking dinner!

My favorite plant-based meal is veggie tacos. Lots of veggies (zucchini, peppers, onions, yellow squash) avocado, black beans or tofu with pumpkin seeds and hot sauce all in a corn tortilla. Plant-based, heart-healthy and tasty!

One of my favorite plant-based meals is a Mediterranean Bowl made with spinach, hummus, kalamata olives, tomatoes, cucumber, brown rice, avocado, and falafel patties. Served with whole wheat pita bread!

My absolute favorite would have to be butter leaf lettuce wraps filled with chickpeas, quinoa, avocado, cucumbers, tomatoes, and a tahini lemon dressing 😋

My family loves smoothies for breakfast or afternoon snack! Try adding a bunch of kale with bananas, berries and other favorite fruits. Along with unsweetened almond milk, low fat vanilla almond or soy milk yogurt and agave nectar you have a healthier version of sweetness!
