Peanut Butter Oat Bites

These bites can be made ahead of time for a easy grab and go snack to keep the “hanger” at bay.

Ingredients:

  • 1 cup old fashioned rolled oats, gluten free if needed
  • 1 cup nut butter (ex: peanut, almond)
  • 1 tablespoon dried fruit (ex: cranberries, raisins)
  • 1 tablespoon honey (can substitute with maple syrup or agave)
  • 1 tablespoon chia seeds (can substitute with ground flax, wheat germ, hemp hearts, or sunflower seeds)
  • Optional add-ins: mini chocolate chips, shredded coconut, chopped nuts

Directions:

  1. Combine all of the ingredients in a medium sized bowl. Mix to combine.
  2. Roll into 1-1 ½ inch size balls.
  3. Place the bites on a baking sheet or plate and freeze or refrigerate until fully set, about 30 – 60 minutes. Or just place in the storage container to set in the refrigerator.
  4. Place in an airtight container or ziplock bag. Store the bites in the fridge for 1 week, or in the freezer for up to 3 months.
  5. Feel free to switch up the types of add-ins every time you make them. Enjoy!
